Meatball Sub

Comfort food at its finest! An ideal snack or meal that I’d normally have during the week, its flavours and textures are totally satisfying.

Serves:

20 mins

Ingredients

  • 150 grams of pork or beef mince
  • Half an onion, grated
  • 1 egg
  • 2 tbsp parsley
  • 2 garlic cloves , minced
  • 2 tbsp Parmigiano reggiano or parmesan Salt & pepper to taste

For the sauce

  • 1 tbsp olive oil
  • Half an onion, chopped
  • 1/2 cup of Peat’d Original tomato sauce
  • 1/4 cup water
  • 1 tsp chilli flakes
  • 3 tsp dried Italian herb mix (parsley, basil, thyme, oregano) Salt & pepper to taste

Method

Step 1

Add all the meatball ingredients in a bowl, mix well. Measure out a heaped tablespoon and roll lightly to form a ball, repeat with remaining mixture.

Step 2

Heat 1 tbsp of olive oil in a pan over medium high heat. Add the meatballs and brown all over for about 3 to 4 minutes then carefully transfer them onto a plate afterwards.

Step 3

For the sauce, sauté the onion and garlic for 2 to 3 minutes until translucent. Add the Peat’d Original tomato sauce and the remaining ingredients. Bring to a simmer and cook the meatballs for 8 to 10 minutes, turning occasionally. Put the meatballs on top of your bread of choice then finish it off with grated parmesan.
